Roasted Red Potatoes With Bacon & Ranch

8 red potatoes cut in small chunks –don’t peel
½ to 1 cup bacon pieces
½ cup parmesan cheese shredded
1 ½ cup mozzarella cheese shredded
1 cup ranch dressing
2 green onions chopped

In a mixing bowl, combine the chopped potatoes, ranch, bacon, cheeses and green onion. (reserve a little bacon and cheese for the top) Mix until well combined making sure the potatoes are well covered and moist—add more ranch if needed. Put potato mix in a 13 x 9 cake pan. Cover with foil and bake at 400 for 60 minutes. Remove foil and cook for 10 more minutes or until potatoes are browned and crispy.
