Lemon Bars

Lemon Bars

Crust:
1 cup butter, softened
½ cup powdered sugar
2 cups flour
dash of salt
Filling:
4 eggs beaten
1/4 cup flour
2 cups sugar
6Tbs lemon juice

Combine crust ingredients with a fork or pastry blender. Mix well. Pack crust onto the bottom and slightly up the sides of a 9x13" baking pan. Bake in a 350 degree oven for 15 minutes.

For the filling combine the flour, sugar and salt. Add egg and lemon juice. Mix by hand. Pour into the slightly cooled crust. Bake in a 350 degree oven for about 30 min. (until set in the middle). Let cool slightly and sprinkle with powdered sugar. Cool completely and cut into squares.
